HEIRLOOM. This muted blue-gray, warted winter squash is the pie-maker’s best kept secret. The unique outer shell gives way to the somewhat dry and medium-sweet yellow orange flesh that melts in your mouth. The real stand-out trait of this squash? It’s storage ability. The Blue Hubbard squash famously lasts for six months after harvest, meaning you can grow a lot and eat it long into the winter and spring. The exact story behind this farmstand-favorite is not known, however, it is generally agreed that the original Hubbard squash seed made its way to the US via a ship that had traveled from the Caribbean to Marblehead, Massachusetts. From here, it was bred to feature its unique blue skin by either a Ms. Hubbard or a Mr. Gregory. Either way, this teardrop-shaped, seven to 12 pound winter squash is a winner in any garden (and kitchen).
