ORGANIC. Emmer is an ancient type of wheat prized for large grains with great flavor and relatively low gluten content. It is known as “farro” when hulled and cooked whole. Lucille is a spring planted variety, best planted around early April and harvested in about late June. Grains will need to be dehulled before they can be cooked or milled into flour. There are homestead-scale dehullers available, or with a little DIY ingenuity, you can retrofit a grain grinder with dehulling pads, like in this instructional video from Lehman’s. If you’re saving seed to replant, store it with the hulls on, as dehulled seed quickly loses viability.
Direct seed into the garden after all danger of frost has passed. Wheat will need full sun and well-draining soil. Water well to ensure good germination. Once germinated, wheat will need at about an inch of water per week. Allow grains to dry on the plant and harvest when firm. Annual.
