Its name comes from its unusual shape and growth habit, with pointed, triangular leaves growing upward in a tight rosette. This high-yielding, early producer is ideal for cut-and-come-again harvesting for use in salads. Slow Food includes Deer Tongue lettuce in the Ark of Taste, for its long history and distinctive culinary quality.
