Foeniculum vulgare
  Used extensively in Italian cooking, these licorice-flavored bulbs have a texture like celery. Leaves, stalks, and seeds are used to flavor soups, stews, and fish dishes. 
Direct seed or transplant into the garden in early spring or late summer. Prefers full sun and well-draining soil. Water well to ensure good germination. Once germinated, fennel will need at least an inch of water per week. Fennel bulbs can be blanched as they size up.
