HEIRLOOM. This classy and refined French heirloom is known for its cylindrical, blunt-tipped shape, as well as its fine-grained, nearly coreless texture and mild, sweet flavor. It has been a favorite for fresh eating as well as storage, freezing, and canning since its introduction in the 1850s. Widely adapted, though it performs best in deeply loosened, high mineral content soils. The 7-inch roots can be ready in just 65 days, lending this variety its alternate name, “Early Coreless.”
