Beta vulgaris
The beet for people who think they don’t like beets! These vibrant, sunset-yellow roots are extra sweet, tender, and mild-flavored compared to classic dark red beet varieties. One of the best varieties for juicing or eating raw. Added bonus: their light-colored juice doesn’t stain everything in the kitchen when you cook with them! Plus, the light green tops with beautiful golden veins are good eating too.

I planted some of these in an above-ground box, lightly watered for a few days and got GREAT germination. Once they got going, they grew faster than I expected. I had purchased a single plant about 6″ tall at a nursery just in case these didn’t do well, and not they’re taller than the plant! The flavor profile is good, and they flower almost continuously.

I planted the seeds directly in dirt, watered lightly twice a day for about 20 minutes. It has been about a month and I am starting to get full blooms of lettuce!
