 Amaranthus hypochondriacus
 
Montana Popping amaranth is a very productive, four to six-foot-tall variety with bright green leaves and dense, vibrant green flower heads. The young leaves are edible, and can provide you with fresh, home-grown greens in the heat of summer when most salad greens have bolted and turned bitter. Once the plants mature, the seeds are a beautiful golden-orange color and serve as a gluten-free grain. They can be used in flours and breakfast cereals or for popping like popcorn – or, leave them on the plant in fall to support your local wild birds!

These were used in Mother’s Day gift Baskets for a group. Several people have shared the photos of their herbs, so I believe they worked as expected. I myself, ended up with the Thyme seeds, and they are growing well.

All seed packs are inside another zippered pouch. The tiny seeds are in another ittyy bitty zipper bag to avoid getting lost (thankfully). The package included little signs you can easily use permanent marker on to identify what is growing. Seeds sprouted in a few days. The only one that didn’t is chives which I will blame myself as I haven’t been successful with chives in the past. I saved a few of some of the seeds to replenish during the season.
